Velva’s Classic Vinaigrette Salad Dressing

I have a memory from over forty years ago, about salad dressing. I watched an older sister of a friend dress a simple salad of iceberg lettuce and sliced tomato with white vinegar, vegetable oil, salt and pepper. This handful of simple ingredients became my โgo toโ recipe for many years. Bottled salad dressings were rarely, if ever, part of my dinner table.
These days my salads are full of colors, and textures. My basic salad dressing evolved with the times too, and I dress my colorful salads before serving with a light toss of olive oil, any acid (any vinegar or lemon juice) a tiny dollop of honey, Dijon mustard, salt and pepper.
There are a million variations to the base dressing you can add to change up the flavors. You can add an array of herbs, garlic, ginger, choice of vinegar or acid. The sky is the limit.
A handful of simple โwholeโ ingredients mixed in less than five minutes with no chemicals or preservatives. There is no salad dressing in a bottle that can compete with the fresh flavors of a homemade dressing.
Ingredients:
1/4 cup of apple cider vinegar ( or any acid including fresh lemon juice)
1/2 cup olive oil
1 Tablespoons Dijon Mustard
1/2 teaspoon honey
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Directions:
Combine all ingredients in a glass mason jar or any container with a tight lid. Shake vigorously until emulsified.
Tip: you can combine all the ingredients in a bowl. Prepare your salad and place on top. Toss your salad when ready to serve.

I can appreciate your new refined pallet. I grew up having ketchup on my pasta, but now I understand that high end restaurants serve pasta with tomato sauce. MIND BLOWN. I must try that one of these days. Kidding aside, vinaigrette is my go-to dressing too.
