Country Chicken Soup
PUBLISHED ON: 08.12.2011
I know that not everyone finds soup inviting in triple degree temperatures. Many perceive soup as something to enjoy only in the cooler months. Not me! I am a soup lover and it invites me to enjoy bowl after bowl, all year long.
I have been making this country chicken soup for many years. I have no idea where the recipe came from and it never fails me. This soup is simple, flavorful and delicious.
Country Chicken Soup
Serves 4-6
Ingredients:
1/2 stick butter
2 medium onions chopped
2 tablespoons flour
1 teaspoon curry powder
3 cups chicken stock or broth
1 cup chopped small red potatoes
1 carrot chopped
1 stalk celery chopped
2 tablespoons chopped fresh parsley
1/2 teaspoon sage or poultry seasoning
2 cups cubed chicken
1-1/2 cups half n’ half
1-10 ounce frozen chopped spinach(thawed) or 1/2 bunch fresh
Salt and freshly ground black pepper to taste
Directions:
Saute onion in butter until clear.
Stir in flour and curry powder. Cook 2-3 minutes, constantly stirring.
Add broth, potatoes, carrots, celery, parsley and sage. Bring to a boil. Reduce heat to simmer and cover for 10 minutes.
Add chicken, half n’ half and spinach. Simmer another 5-7 minutes.
Enjoy!

I am like you, I love soup anytime. This is a very different recipe from my chicken soup — butter, half and half, spinach, and potatoes. I have one of those dratted summer colds — this would be perfect. Joni

It certainly looks beautiful and fresh – with air conditioning such a way of life, there's no reason we can't have hot soup year round.
Diane
I can always have soup, I have copied this to my recipe file it looks delicious. Thanks Diane

Nice take on homemade chicken soup. I make my own a lot in the winter months, and so ready for a big pot of it. I think I would love to give this one a try. Looks and sounds delicious and good for what ails ya! Thanks.
Chris
I fall in the category of \”soup in the fall/winter\” but I definitely will keep this one on file for when those first chilly winds crawl across Tennessee this fall.

I love soup any time of the year, too, but actually there's a little nip in the air around here these days, so this soup is just what I'm starting to think about making. I like the curry and the spinach in this one.

It looks wonderful and hearty. I have never had curry in chicken soup before. I bet it adds a little extra flavor that people can't figure out. Saving this one for sure.

This is odd… one day our power went out after a storm, so I went to a neighborhood restaurant where they had something called \”Southern Soup\” as the Daily Special. I thought it was wonderful but had no idea how to make it myself and I've gone back a couple of times in hopes that they'd have it again. No success. The chef had used collards instead of spinach but other than that, this sounds close enough. THANKS!

Velva-where was your delicious soup when I needed it?…I wish I would have seen this recipe when I got the weird pinched nerve…I could have made your yummy soup assisting my granddaughter, age 9 to make this.Honestly, this is the first chicken soup that is so unusual with the curry powder, and the poultry seasoning. It is hardy, pretty, and oh, so delicious!A must make for me!xoxo
