Easy Greek Lemon Rice With Feta

The inspiration for this dish came from a friend this week who shared a recipe from Laughing Spatula
for a quick and easy rice dish.
I try to keep meals uncomplicated during the hot, sometimes lazy summer months in northern Florida. Nobody wants to heat up their kitchens when the mercury outside is close to hundred degrees, with matching humidity.
This Greek style dish using day-old white rice tossed with freshly grated lemon zest, a splash of lemon juice, and crumbled feta creates a deliciously simple side dish. Its bright flavors and simplicity steal the show.
Ingredients:
2 Tablespoons butter
Zest of one lemon
2 garlic cloves, minced
2-3 cups pre-cooked white rice (*note-day old is best)
1/2 cup feta cheese, crumbled
Salt and pepper to Taste
Juice of one lemon
Minced Parsley
Garnish: Minced parsley and lemon slices
Directions:
In a skillet on medium heat, melt butter. Once bubbling, combine lemon zest and garlic. Stir to combine.
Add precooked rice to skillet. Stir to combine. Turn burner off once rice is warm throughout.
Stir in feta cheese, and parsley. Drizzle with lemon juice, and season with salt and pepper to taste. Serve and enjoy!
